Several months ago I made the most delicious chocolate chip cookie dough brownies recipe! I shared it on my social network sites and then realized *gasp* I didn’t share the recipe with any of you. Oh the horror! Note, that now that I’m watching my food intake, portions, etc. this is a no-no for awhile, but OH MY GOSH.. they are heavenly. Especially if you are are brownie, cookie dough lover! They’re very rich though, so don’t be surprised when you don’t find the need to reach for two. We served them to several friends and everyone loved them. They are also made it two steps, so don’t just think you can whip these up last minute, but they don’t take that long other than the chilling.
Chocolate Chip Cookie Dough Brownies — the Recipe you’ve been dying to make!
Bottom Brownie Layer:
3/4 cup (1 1/2 sticks) unsalted butter
1 1/2 cups bittersweet chocolate chips
1 cup white sugar
1/2 cup packed light brown sugar
4 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup all-purpose flour
Top Cookie Dough Layer:
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3/4 cup white sugar
3/4 cup packed light brown sugar
1/4 teaspoon salt
2 tablespoons milk
1 1/2 teaspoons vanilla extract
1 cup all-purpose flour
1 cup miniature chocolate chips
additional miniature chocolate chips for the top
Prepare the brownie layer first-
Preheat the oven to 350 degrees F. Spray a 9×9-inch pan with nonstick cooking spray.
In a microwave safe bowl, microwave in 30 second time intervals (or less) to melt butter & chocolate chips together until all is melted and smooth. Make sure to keep stirring.. I’ve made this mistake a time or two and it burnt
Stir in the sugars & then the eggs, vanilla & salt. Add & stir in Flour. Add brown batter into prepared pan and bake for 25 to 30 minutes, or until the brownies are completely cooked. Then cool the brownies completely, I put them in the refrigerator to speed up the process.
Prepare the cookie dough layer-
I prepared this layer while the brownies were in the fridge, but don’t get in too big of a hurry because it takes awhile for the brownies to completely cool.
Combine the butter, sugars and salt & mix in your mixer until soft and creamy. Add in the milk, vanilla & the flour and mix in until combined. Add the 1 cup of chocolate chips.
Then add the cookie dough onto the top of the completely cooled brownies and spread. I found it was hard to get this layer to really stay in place and get it even. I read that you can use nonstick cooking spray to help, but it just took me awhile and I got it all layered out. Then to make it pretty add the additional chocolate chips to the top. Put in the fridge to chill for at least 2 hours.
When you’re ready to serve, use a sharp night to cut the brownies. I used a wet knife to get clean edges, but as you can see they’re not perfect. Keep the brownies chilled until you’re ready to serve & enjoy.
