I love when I post a photo on Instagram and my followers love it & ask for the recipe. It kicks my butt into gear to actually take the time to post it on the blog. I made some different green pepper soups over the last six months or so, but kinda narrowed it down to my own version after my hubby said “I love it this way” which still makes me grin when he loves my home cookin’ & the fact that the man wouldn’t come within a 10 foot pole of green peppers, onions or tomatoes when we first met.
Stuffed Green Pepper Soup Recipe
- Salt & Pepper
- 1 lbs of ground beef
- 1 medium sized onion, diced
- 2 cans of diced tomatoes with chiles
- 1 large green bell pepper, diced
- 1 32 oz chicken broth
- 1 can of tomato sauce (8oz)
- 2 cups of cooked rice
- 1 TBSP sugar
- 1tsp garlic
- Cheddar Cheese shredded, for topping
Directions: In a large pan, cook your burger & sautee your onion & green pepper. I toss my green pepper & onion into the Ninja to make it small and chopped. I also like to salt & pepper my meat and veggies. If you have a lot of excess grease I’d drain that off. Add all the other ingredients, stir well and let cook for 20 minutes or so. Make sure you taste it to see if you need more salt and pepper. I like more salt then one should eat, so I’m constantly testing and adding to make it my own. Once it’s finished, added some shredded cheddar cheese and enjoy.
